做(zuò )法:春笋(sǔn )切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
