做法:春笋切成片后加(jiā )少许盐(yán )捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住(zhù )春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
