做法:洗净宰好鲫(jì )鱼,洗(xǐ )净(jìng )淮(huái )山和薏米。用清水把(bǎ )陈(chén )皮泡软,拍裂一小块(kuài )姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待(dài )油六(liù )成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎(jiān )煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转(zhuǎn )中小火煲一个半小时(shí ),下盐调味即可品尝。
