做法(fǎ ):春笋(sǔn )切成片后加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的(de )时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
