做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
