做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒(chǎo )1分(fèn )钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
