做法(fǎ ):春笋(sǔn )切成片后加少许盐捞(lāo )出(chū )后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
