做法(fǎ ):春(chūn )笋切成片后(hòu )加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
