做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用(yòng )清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半(bàn )掩住春笋,盖上(shàng )锅盖(gài )大火煮开后(hòu )转(zhuǎn )中火(huǒ )。煮到水(shuǐ )快熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
