做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖(gài )大(dà )火(huǒ )煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁(zhī )时(shí )盖上(shàng )锅盖焖。
