做法(fǎ ):春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用清(qīng )水浸(jìn )泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上(shàng )锅盖(gài )焖。
