做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加入(rù )盐,翻炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖焖。
