做法:春笋切(qiē )成片后(hòu )加少许盐(yán )捞出后用(yòng )清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时盖上(shàng )锅盖焖。
