做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右(yòu )。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
