做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻(fān )炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀(yún )稍收汁(zhī )时(shí )盖上锅盖焖(mèn )。
