做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧(shāo )热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛(niú )肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅(guō )盖焖。
