做法:春笋(sǔn )切成(chéng )片后加(jiā )少许盐捞出后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
