做(zuò )法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油(yóu )翻炒均匀,加入(rù )少(shǎo )量清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上锅(guō )盖焖(mèn )。
