做法:春笋切成片后(hòu )加少许盐(yán )捞出后用清水(shuǐ )浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅(guō )盖大(dà )火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
