做法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
