做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住(zhù )春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁(zhī )时(shí )盖(gài )上锅(guō )盖焖。
