做法(fǎ ):春笋切成片后加少许(xǔ )盐捞(lāo )出后用清(qīng )水浸泡,生姜切片(piàn ),葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
