做法:春笋切成片后加(jiā )少(shǎo )许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝(háo )油(yóu )翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
