做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
