做法:春(chūn )笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火(huǒ )。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅(guō )盖焖(mèn )。
