做(zuò )法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入(rù )生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
