做法:春笋切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左(zuǒ )右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上(shàng )锅盖(gài )焖。
