做法:春笋切成片(piàn )后加少许盐捞出后(hòu )用清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的(de )时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
