做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖(gài )焖。
