做(zuò )法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到(dào )水快(kuài )熬干(gàn )的时候(hòu )加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
