做法:春(chūn )笋切成片(piàn )后加少(shǎo )许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖(gài )上锅盖焖(mèn )。
