做法:春笋切成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅(guō )盖(gài )大火煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
