做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮(zhǔ )到水快熬干(gàn )的时(shí )候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
