做法:春(chūn )笋切成(chéng )片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到(dào )水(shuǐ )快熬干的(de )时候加(jiā )入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
