做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快(kuài )熬干的时候(hòu )加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收汁(zhī )时盖上锅盖(gài )焖。
