做(zuò )法:春笋切(qiē )成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右。再加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
