做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片(piàn ),葱切(qiē )成(chéng )段(duàn )。锅烧(shāo )热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
