做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖(gài )焖。
