做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春(chūn )笋、牛肉片(piàn )、葱段翻(fān )炒(chǎo )1分钟左(zuǒ )右。再加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
