做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入(rù )生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
