做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱(cōng )切(qiē )成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅(guō )盖大(dà )火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
