做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热(rè ),倒入2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅(guō )盖焖。
