做(zuò )法:春笋切成(chéng )片(piàn )后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后(hòu )转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
