做法:春笋切(qiē )成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油(yóu ),放入(rù )生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上(shàng )锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
