做法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
